Bunda masih ingat salah satu kue jajanan pasar yang di sebut kue jongkong ? yaitu salah satu penganan yang terbuat dari tepung beras yang dicampur dengan sari pandan, sehingga berwarna hijau dan harum baunya. Kemudian ditambahkan dengan kuah santan yang berwarna kecoklatan. 

Mungkin di beberapa daerah terdapat juga jenis kue yang seperti ini, tetapi kalau di kota saya di sebutnya jongkong. Dan biasanya di jual oleh penjual keliling yang biasa menggunakan tampah. Berikut saya bagi resepnya ya bunda :D

Berikut bahan dan cara membuatnya 
Bahan untuk jongkong hijau :
  • 100 gram tepung beras
  • 1 sdm tepung terigu
  • 2 sdm gula pasir
  • 1 sdt garam halus
  • 2 gelas air
  • 4 tetes pewarna hijau

Bahan untuk jongkong pink :
  • 100 gram tepung beras
  • 1 sdm tepung terigu
  • 2 sdm gula pasir
  • 1 sdt garam halus
  • 2 gelas air 
  • 4 tetes pewarna pink

Untuk kuah santan :
  • 3 gelas santan kental
  • 50 gram gula pasir
  • 30 gram gula merah
  • 2 sdt garam halus
  • 4 lembar daun pandan atau vanili

Cara Membuat :
  1. Siapkan loyang segiempat yang sudah diolesi dengan minyak sayur secukupnya
  2. Campur semua bahan untuk jongkong hijau kecuali pewarna hijau, masak dengan api besar sambil diaduk-aduk
  3. Setelah mengental, angkat dan tambahkan 4 tetes pewarna hijau lalu aduk rata kemudian masukkan ke dalam loyang yang sudah di siapkan, ratakan
  4. Selanjutnya campur semua bahan jongkong berwarna pink, dan masak seperti memasak bahan untuk jongkong berwarna hijau
  5. Lalu masukkan ke dalam loyang yang berisi jongkong berwarna hijau, dan ratakan
  6. Kemudian kukus selama 15 menit, angkat dan dinginkan
  7. Untuk kuahnya : Campur 3 gelas santan dengan 50 gram gula pasir, 30 gram gula merah, 2 sdt garam halus dan 4 lembar daun pandan atau 1/2 sdt vanili. Masak sambil terus diaduk hingga mendidih lalu angkat
  8. Untuk penyajian : Potong jongkong sesuai selera, letakkan di piring saji lalu siram dengan kuah santannya. Lebih nikmat jika diberi es serut atau es batu

Kue yang satu ini terasa nikmat sekali disantap ketika cuaca panas, biasanya saya suka menambahkan es batu kedalamnya. Teksturnya lembut dengan kuah santannya yang sedikit manis dan gurih, benar-benar menjadi salah satu hidangan favorit di rumah saya.

Warnanya meriah ya bunda... ada hijau, pink dan coklat dari kuah santan. Tetapi jika bunda mau bisa ditambahkan dengan warna-warna lainnya. So, Enjoy Your Cooking Mom :D




Rainbow Jongkong Cake Recipe

Jongkong are made from rice flour mixed with pandan juice, so green and fragrant. Then add the coconut milk brownish.

Maybe in some areas there are also different types of cake like this, but in my town its called with jongkong. And are usually sold by a vendor who used to use winnowing.
Here I share the recipe : D

Here are the ingredients and how to make
Ingredients for green jongkong :
  • 100 grams of rice flour
  • 1 tbsp flour
  • 2 tablespoons granulated sugar
  • 1 tsp fine salt
  • 2 cups water
  • 4 drops of green coloring

Ingredients for pink jongkong :
  • 100 grams of rice flour
  • 1 tbsp flour
  • 2 tablespoons granulated sugar
  • 1 tsp fine salt
  • 2 cups water
  • 4 drops of pink coloring

For the coconut milk sauce :
  • 3 cups coconut milk
  • 50 grams of sugar
  • 30 grams of brown sugar
  • 2 tsp fine salt
  • 4 leaves of pandanus or 1/2 tsp of vanilla

How To Make :
  1. Prepare a rectangular baking pan that has been oiled with vegetable oil to taste
  2. Mix all ingredients of green jongkong except the green coloring, cook over medium heat while stirring. Once thickened, remove from heat and add 4 drops of green coloring and mix well then insert it into the baking has been prepared, flatten
  3. Furthermore, mix all ingredients pink jongkong, and cook like cooking ingredients for green jongkong
  4. Then enter into the pan containing the jongkong green, and flatten
  5. Then steamed for 15 minutes, remove from heat and let cool
  6. For the sauce : Mix 3 cups coconut milk with 50 grams of sugar, 30 grams of brown sugar, 2 tsp fine salt and 4 pieces pandan leaves or 1/2 teaspoon vanilla. Cook, stirring constantly until boiling and then lift
  7. For serving : Cut jongkong according to taste, place on a serving plate and pour the coconut milk sauce. More delicious if given the shaved ice or ice cubes

This cake feels good once eaten when the weather is hot, usually I like to add ice cubes into it. Soft texture with a slightly sweet coconut milk sauce and savory, really become one of my favorite dishes at home.

Festive color ... there are green colour, pink and brown from coconut milk. But if do you want, you could be add with other colors. So, Enjoy Your Cooking Mom : D
