Bercerita tentang mie

Mi (atau juga sering ditulis mie) adalah adonan tipis dan panjang yang telah digulung, dikeringkan, dan dimasak dalam air mendidih. Istilah ini juga merujuk kepada mi kering yang harus dimasak kembali dengan dicelupkan dalam air. Bangsa Tionghoa telah mengklaim sebagai pencipta mie, dan mie tertua yang berusia 4000 tahun di temukan di Qinghai, Tiongkok.

Banyak jenis mie yang dikenal dan dapat di temukan di berbagai tempat di belahan dunia, juga dengan nama yang berbeda-beda. Perbedaan jenis dan nama mie tergantung dari campuran bahan baku serta teknik pengolahannya. Umumnya di Eropa mie dikenal dengan nama pasta, dengan menggunakan gandum sebagai bahan bakunya.

Sedangkan di Asia bahan baku dalam pembuatan mie dapat bervariasi seperti kwetiau dari tepung beras, ifu mie dan misoa dari gandum,Olchaengi Guksu yaitu mie dari korea selatan dengan bahan baku tepung jagung, di Jepang dikenal dengan Soba dari tepung buckwheat dan masih banyak jenis mie yang lainnya.

Asyik membuat mie telur

Kalau sudah tahu tentang jenis-jenis mie, berikut ini ada resep mie telur yang mau saya bagikan ke anda. Kalau dari bahan baku tepung terigu dan telur, mie telur disebut Reshteh di timur tengah dan Spatzle di Jerman selatan.

Cara pembuatannya sebenarnya cukup mudah, hanya dengan mencampur semua bahan yang ada dan barulah di pipihkan menggunakan rolling pin atau ampia kemudian di potong-potong. Mie bisa langsung di rebus ketika ingin di sajikan langsung atau di keringkan untuk penyimpanan dengan jangka waktu yang cukup lama.

Karena tertarik untuk membuat mie sendiri, saya sudah coba membuatnya beberapa kali. Teksturnya tidak terlalu kenyal, karena tergantung dari lama perebusan mie. Tetapi karena sudah terbiasa makan mie instan yang kenyal, beberapa kali saya sempat menambahkan beberapa sendok makan sagu ke dalam adonannya agar teksturnya kenyal. Berikut resep mie telur yang pernah saya buat tanpa menggunakan sagu...

Berikut bahan dan cara membuatnya
Bahan - bahan untuk mie telur :
  • 500 gram tepung terigu
  • 2 butir telur
  • 1 gelas air
  • 1 sdt garam halus


  • Bahan - bahan untuk kaldu mie :
  • 1 bagian dada ayam
  • 250 gram bok choy / pak choi
  • 4 batang daun bawang
  • 4 siung bawang putih
  • 1 ruas jahe atau 2 sdm jahe di parut / dihaluskan
  • 1 sdt kayumanis bubuk
  • Garam dan gula secukupnya
  • Air secukupnya

  • Cara Membuatnya :

    1. Masukkan 500 gram tepung terigu ke dalam wadah yang besar, tambahkan 1 sdt garam halus lalu aduk rata

    2. Buat lubang di tengah-tengah tepung terigu, masukkan 2 butir telur lalu aduk lepas di campur dengan tepung terigu menggunakan garpu

    3. Tambahkan 1 gelas air sedikit demi sedikit sambil terus di aduk dan di campur dengan tepung terigu

    4. Setelah air habis dan adonan cukup basah, uleni adonan menggunakan tangan hingga kalis lalu bagi menjadi 4 bagian adonan untuk memudahkan dalam membentuk mie nantinya

    5. Selanjutnya ambil 1 bagian adonan, pipihkan menggunakan rolling pin ( ketebalan mie sesuai selera ) lalu taburi dengan tepung dan lipat-lipat mie serta potong mie sesuai selera ( besar atau kecilnya mie yang di inginkan )

    6. Taburi tangan serta lipatan mie dengan tepung yang cukup banyak agar memudahkan untuk melepaskan mie, lalu rebus mie di dalam air mendidih selama kurang lebih 3 menit hingga mie matang, angkat dan sisihkan

    7. Untuk membuat kuah mie : masukkan air secukupnya ke dalam panci, tambahkan 4 siung bawang putih yang di haluskan, 1 ruas jahe atau 2 sdm jahe yang di parut / di haluskan, gula sesuai selera lalu masukkan juga 1 bagian dada ayam, tunggu hingga kuah benar - benar mendidih dan ayam sudah matang, matikan kompor dan angkat ayam dari dalam air rebusan dan potong tipis-tipis lalu sisihkan

    8. Selanjutnya kita menyiapkan sayuran : rebus 250 gram bok choy dalam air yang sudah di taburi garam lalu angkat, cuci bersih 4 batang daun bawang lalu iris-iris tipis

    9. Untuk menghidangkan mie : Taruh beberapa bagian mie yang sudah di rebus ke dalam mangkok, lalu tuang air kaldu ayam secukupnya. Taruh irisan daging ayam di atasnya, beberapa lembar bok choy dan taburi dengan irisan daun bawang serta tambahkan garam / kecap asin sesuai selera. Hidangkan.


    Mau mie kenyal atau tidak...hmmm, sesuai selera ya

    Kalau anda sangat menyukai tekstur mie yang kenyal, anda bisa menambahkan beberapa sendok makan tepung sagu ke dalam adonan mie dan mengurangi jumlah takaran tepung terigu yang di gunakan. Tingkat kekenyalan mie juga bisa anda atur sesuai selera dengan menambahkan atau mengurangi takaran tepung sagu yang akan di gunakan. Selanjutnya, anda bebas berkreasi dengan tingkat kekenyalan mie yang sesuai selera anda.

    Menyantap mie telur dengan kuah kaldu ayam dan sayuran rebus diatas di sebut juga mie telur dengan sajian ala china, di sajikan dengan penampilan yang sederhana dan sejujurnya cara menghidangkan mie yang seperti ini dirasakan sangat cocok sekali untuk saya dan keluarga.

    Untuk menambah rasa ketika mie sudah dihidangkan di dalam mangkok, cukup tambahkan garam halus atau kecap asin sesuai selera. Tetapi kembali ke selera masing-masing ya :D, mie telur yang sudah di rebus dapat di sajikan dengan cara yang lain. So, Enjoy Your Cooking Mom :D

  • 500 gram wheat flour
  • 2 eggs

  • Ingredients for Noodles broth :
  • 1 pieces of chicken breast
  • 250 gram bok choy / pak choi
  • 4 leeks
  • 4 cloves of garlic
  • 1 vertebra ginger or 2 tablespoons grated ginger or puree
  • 1 teaspoon cinnamon powder
  • Salt and sugar to taste
  • Enough water

  • How To Make :

    1. Enter 500 grams of flour into a large container, add 1 tsp fine salt and mix well

    2. Make a hole in the middle of the flour, put 2 eggs and stir in flour mixed with a fork

    3. Add 1 cup water gradually while constantly stirring and mixed with flour

    4. After water runs out and quite wet dough, knead the dough by hand until smooth and divide into 4 pieces of dough to make it easier to form the noodle later
